Brief Canning Tuna Directions Wash mason jars in hot soapy water by hand or dishwasher. Use only 1/2 pints or pints. Do Not Use Quarts. Wash rings and lids. Put lids in saucepan of water and heat when ready to cap jars, do not boil. Clean and fillet albacore, cut into chunks small enough to fit into jars. Add 1/4 tea. kosher salt (1/8 tea. for 1/2 pints) to each jar. Add chunks of fish. With wet paper towel, wipe top of jar rims. Place warmed flat lid and screw ring on jar, tighten firmly, but don't over do it. Follow directions for your canner, dial-type or weighted-gauge. Place canner on stove, add appropriate amount of water and jars. Follow recommended processing times and pressure for your location and canner, link below. Count time once the canner reaches required pressure, write down what time it is and what time to turn off heat. Keep an eye on your canner. When done, allow to cool to 0 pressure and carefully remove hot jars. Allow jars to cool, tap each one to confirm lid is sealed, if not, place in refrigerator and eat soon.
